Called Miodowe Libretto, which translates as ‘honey libretto’, the cake is an explosion of flavour: a sponge cake made of almond flour with a topping of honey glazed almonds, Cointreau and a wealth of honey, finished off with a sourish glasage of passion fruit and lemon. The recipe was devised by two culinary big-names: Agata Wojda, executive chef of the Bellotto Hotel and Aleksandra Klimczewska, the pastry chef of Miodowa Café.
